Fluffy Pancakes

I love pancakes. They are one of my favorite breakfast foods ever. Anyway, I have been working on a family recipe and trying to make it a bit better for my liking. And I think I finally found the magic. So for the first time ever. Here is a recipe out of my own cookbook. I use just the recipe to organize the recipes I create on my own or those from a website that I have tried and enjoyed. I have taken a screenshot of my recipe and attached it here for you all.

Lemon Crinkle Cookies





Oh gosh, guys!!! You need to try these cookies. I found this recipe on this website. It is so amazing! Super simple and easy to make. I will say that in her recipe she used gluten free flour, I didn't have that and used all purpose flour. I do plan on making it again with the gluten free flour. I have been following Thyme and Joy  for a few months and have tried several of the recipes. You guys, if you are looking to try some new recipes during this quarantine, check out her website. There is something there for everyone.

I highly recommend these cookies. You know you want some.

Pineapple cupcakes


My friend was having a rough week, so I decided to bake them some cupcakes. The above picture is the finished product. These delightful cupcakes are pineapple flavor with bite-size pieces of pineapple in them. It is topped with a vanilla cream cheese icing.

Julian, California

If you are ever in California, you should make your way to Julian, California. You will find this adorable street sign across from the town hall. This little town reminds me of a town you would see in an old movie. It was adorable.  They pride themselves with the best apple pie. Let me tell you as a person who hates apple pie, that slice of apple pie was literally the best apple pie I have ever tasted. Yes, I hate apple pie, in face I hate all pies. But I at least try them in hopes that I will find what other people enjoy in eating pie. Well folks, I finally had that moment in Julian California. The crust was amazingly soft yet crispy and just melted in your mouth. The apples were sweet and beautifully flavored. So with each bite of ice cream and pie your taste buds and tummy did a happy dance. I highly recommend you making the trip if you are looking for some good pie. :)

Pumpkin whoopie pies

Popeye and I have our first fall/thanksgiving tradition as of this year....I made pumpkin whoopie pies almost from scratch (I used the pumpkin from the can) He (and so did everyone else) loved them...Here is a picture of what was left..Anyway, Popeye has asked me if I can make this yummy goodness every year around this time...I am loving making memories and traditions with him.

Honey whole wheat bread

My Guam family gave me a bread machine as a gift yesterday. They are such sweet people. Anyway, today I made fresh honey whole wheat bread for the first time. So that when my hubby comes home from work this morning he can have breakfast...Here is how the bread came out...I hope it taste as good as it looks.

Today I experimented with making my very own spicy black bean veggie burger. It came out very well, if I may say so myself. The rest of the entree was Jasmine rice and mixed vegetables...It was a quite a delicious meal.

Baking a cake

One of the many things I like doing is baking. So this weekend I decided I would bake a carrot cake from scratch. I turned on the oven to preheat it, gathered my supplies and ingredients and started the baking a cake process. I get done with all my mixing, put the batter in a pan and had placed the pan in the oven. I set the timer and went about my business. I came back to the kitchen when the timer went off and checked the cake. To my surprise, the cake was not baked. I immediately thought to myself, oh no not again, the oven element is broken. But then I decided that's not possible, my brother and I just recently replaced it. So then I decided the oven has another problem...Oh boy now what. Then it occurred to me, the oven doesn't feel hot....so I look at the oven dials---the oven had been turned off...So I turned back on the oven and reset the timer.....Silly me, I had turned off the oven at some point during my mixing the cake batter process and didn't even realize it. So two sets of timers later, the cake was done and came out beautifully. Oh and it was quite tasty if I may say so myself...It is never a dull moment when I am around, hahaha.
